Hey guys! A few weeks ago, i watched The Great British Bake Off and it was cake week, i was inspired by the very complex and beautiful cakes the budding contestants created, so much so that i thought i would give it a go, be inventive and create a beautiful vanilla and blueberry cake, so here is how i made it:
You Will Need:
Crack the 3 eggs into a mug and beat them for about a minute with a fork.
150g of Self Raising Flour
150g of Caster Sugar
150g of Stork
3 Eggs
Blueberries
Jam
Icing Sugar
Sprinkles
10 drops of Vanilla Extract
2 drops of Blue Food Colouring
Sieve the flour and caster sugar into a mixing bowl and add the stork, eggs and vanilla extract. Then whisk these together using an electric whisk or a wooden spoon.
Add about 20 blueberries into the mixture and whisk them in.
Spread the mixture evenly between the two tins and then level it the mixture out using a spatula.
Place them into the oven at 180c for roughly half an hour or until golden brown.
Once you have taken the cakes out of the oven place them onto a cooling rack to cool down before icing.
Fill a saucepan a third full with water and put on a low heat, place chopped up chocolate into a bowl and place in the saucepan and mix until the chocolate has melted.
Put the other cake on top of the cake with jam on to create a sandwich cake.

Now to the fun bit! Using the sprinkles, blueberries and the chocolate shapes decorate the cake! And now you can eat it!
Grease two cake tins of the same size and put grease proof paper into the base of the tins.
Spread the mixture evenly between the two tins and then level it the mixture out using a spatula.
Place them into the oven at 180c for roughly half an hour or until golden brown.
Once you have taken the cakes out of the oven place them onto a cooling rack to cool down before icing.
Fill a saucepan a third full with water and put on a low heat, place chopped up chocolate into a bowl and place in the saucepan and mix until the chocolate has melted.
Lay out some grease proof paper and with the melted chocolate make shapes on the grease proof paper and put into the fridge until solid. You will use these chocolate shapes later on to decorate the cake.
Once the cakes have cooled spread jam over the top of one of the cakes.
Mix icing sugar, water and food colouring to create icing, make sure the icing is stiff so it won't run of the cake but so it's runny enough to spread.

Using a blunt knife spread the icing evenly over the top of the cake, you can dip the knife in hot water if you want as this makes the icing look shiny and smoother.
